WINEMAKING

cellar

The quality of our soil and our know-how allow us to offer you high quality wines, worked and matured in the greatest tradition. 

The vinification cellar is composed of a first part in concrete vats coated with an epoxy resin for food use. Created in 1920, this cellar allows us to vinify all our red grapes. 

The second part of the cellar is composed of a thermo-regulated stainless steel vat room, ideal for the vinification and storage of white and rosé wines. 

THE GRAPE

This is determined according to maturity, which is commonly characterised by technological maturity through simple indicators such as sugars, pH and total acidity. Today, it is definitively accepted that monitoring the evolution of phenolic compounds (tannins, anthocyanins) and aromas is essential to define an optimal harvest date and to obtain information on the potential of the grapes according to the desired wine profile. For this purpose, there are analytical methods, but also simple berry tasting methods, which make it possible to report on aromatic and phenolic maturity. Since most of the tannins are found in the pips, it is important to take an interest in them.  There are analytical methods for this, but also simple methods of tasting berries, which make it possible to account for aromatic and phenolic maturity. The grapes are harvested in parcels very early in the morning in order to preserve the aromas of the grapes which could be deteriorated by the heat.  Each parcel of vines corresponds to a vinification vat.

A particularity of the AOC Entre-deux-Mers, the wines must be blended wines, with a minimum of two white grape varieties used. We have four generations of experience in making white wines and we use four of them.

 

  • Le Sauvignon Blanc allows to obtain lively wines, with powerful aromas and brings to the nose very fresh scents of citrus fruits, grapefruit, passion fruits, underlined by that of wild plants, acacia flower, broom, boxwood...
  • Le Sémillon offers notes of spring flowers, white and yellow fruits, pears, white peaches, as well as suppleness and roundness in the mouth. When young, it is subtly discreet to better reveal itself and express all its aromas when aged.
  • Le Sauvignon Grisa cousin of the Sauvignon Blanc, gives the wine exotic fruit aromas and brings roundness and finesse to the wine.
  • La Muscadelle, florale, fruité et minérale, contribue à la complexité des vins de l’appellation

The AOC Bordeaux and Bordeaux Supérieurs do not require the blending of grape varieties in the wines, but by choice and by aromatic complexity of the wines, three red grape varieties are used :

 

  • Le Merlot gives the wines a high colour intensity, suppleness, fleshy red fruit aromas such as plum, blackcurrant, cherry, fig, violet and sometimes toasted notes for the older wines aged in oak barrels. It gives a wine that can be enjoyed more quickly and does not require long aging.
  • Le Cabernet Sauvignon gives the wines structure, vigorous tannins and an aromatic profile of black fruits such as blackcurrant, liquorice and, with time, the finesse of undergrowth. It has a low alcohol content and good ageing potential.
  • Le Cabernet Franc is, with rare exceptions, the complementary grape variety par excellence, less colourful and less tannic than the Cabernet Sauvignon to which it is often associated (and blended). It brings freshness, finesse and aromatic complexity with notes of raspberry and violet. This variety is ideal for the production of rosé.
